‘Yukyu no Mori’ means ‘Eternity or permanency’.
This Sake was brewed in 2009 and is a very limited-aged Sake. It has been very slowly matured in bottles since 2009 without controlling the temperature allowing the Sake to experience the seasonal changes.
Its shiny amber colour is evidence of the time in the bottle. There is a gentle rose flower on the nose with a hint of fresh turnip, a very complex palate with a creamy mouth feel, honey-like sweetness, dried apricot, lemon cake, and a wonderful balance between umami and clean acidity.
This is a very elegant style of ‘Koshu’ (aged sake). The suggested serving temperature is 15-20 degrees.
